Sweet Potato Tortilla Soup

If you find yourself with extra enchilada sauce from the earlier dish, it also makes a divine vegan soup.

You can thin it out, add some healthy beans and veggies, throw some sweet potatoes in for good measure and you have yourself a big, healthy soup!

The sweet potatoes work as a great chicken substitute and contrast the south west flavours to create this inexpensive meal.

But if it’s a smoother soup your looking for you can always pulse some cornflour and add that too. Side note, if your broth is gluten free your whole soup will be too.
